Katherine Grasberger

Meet Katherine Grasberger, PhD, a passionate Food Technology researcher at Aarhus University in Denmark. With a Bachelor's in Chemistry from Eastern Kentucky University, Katherine moved to Aarhus University, where she earned both her Master's and PhD working in the research group led by Professor Milena Corredig. Katherine's expertise centers on exploring the possibilities of plant and dairy protein blends, particularly within emulsion-based foods. Her research has a strong focus on both understanding the intricate interactions within these blends and their real-world applications in industrial settings. Katherine's work offers crucial insights across multiple length scales — from model interfaces to pilot-scale production.
