Esben Skipper Sørensen

Esben Skipper Sørensen is a Professor in Bioactive Food Proteins at Department of Molecular Biology and Genetics at Aarhus University, Denmark where he is Head of Section for Cellular Health, Intervention and Nutrition. His research is centered on the structure-function relationship of proteins, with particular focus on bioactive milk proteins.  He has contributed to the characterization of several milk proteins with the most prominent being osteopontin. He has a long experience of collaborating with dairy organizations and  companies about the characterization and utilization of milk proteins. He has published approx. 110 scientific articles and is co-inventor on five patents on the purification and application of osteopontin.
