John A. Lucey

Dr. John Lucey is the Owen R. Fennema Professor of Food Chemistry at University of Wisconsin-Madison and director of the Wisconsin Center for Dairy Research (CDR). He joined UW-Madison in 1999. The CDR has over 40 staff and recently opened its new $72M R&D facility at Babcock hall. He has published over 140 peer-reviewed papers and 30 book chapters. Main interests include dairy chemistry, milk protein gels, cheese texture, milk salts and whey processing. He also works on value-added utilization of dairy coproducts. He is PI on the Dairy Business Innovation Alliance (DBIA), a regional USDA center supporting dairy innovation/entrepreneurship.
